I know that hodiaŭ is an adverb but I just read that it is also a noun. The example was "Hodiaŭ estas lundo". Is that correct? Perhaps one should only write "Ĉi tiu tago estas lundo".

In the absolutely correct sentence hodiaŭ estas lundo, I believe that hodiaŭ qualifies as a temporal adverb. Kiam estas lundo? - Hodiaŭ!

While hieraŭ, hodiaŭ and morgaŭ are defined as adverbs they can sometimes function the same way as nouns. This is described in PMEG as "O-vorteca uzo" (noun-like usage). I wouldn't care to venture whether that's sufficient grounds for adding the category of 'noun' to their classifications, it strikes me as a fairly academic question. What's more important is how the words actually work in practice than what category they are deemed to fall into.

Of course hodiaŭ can always be made a noun just by sticking "o" on the end and that page at PMEG has examples of that. I find it clearer style to do this if you want it to role as a noun, though perhaps not as elegant as the bare root.

En Esperanto:
Dum hieraŭ, hodiaŭ kaj morgaŭ estas difinitaj kiel adverboj ili povas iafoje funkcii kiel substantivoj. Tion PMEG nomas "O-vorteca uzo".

Mi tamen estas bonhumora, do mi aldonis partan tradukon.

The noun hodiaŭo is in use, as are hieraŭo and morgaŭo; but in practice, one often finds the simple adverbial forms (hodiaŭ, hieraŭ, morgaŭ) used as if they were nouns. I agree with the ideas of Tommjames.

Tio ne estas korekte. Hodiaŭ estas merkredo.
