-ant' is an active participle, so vizitanto can only mean someone or something visiting, like esperanto isn't hope but someone that hopes, havo is the act of having, havanto, one that has, and havaĵo, what someone has aŭ could have...

hetinjo:Kiam oni uzas ol ? Antaŭ ol mangi,mi devas kuiri. Anstataŭ ol mangi, mi devasOl is used with antaŭ (and it can be used with "post" but "post kiam" is better)

It isn't used with "anstataŭ". It would be "Anstataŭ manĝi", no ol.
We use ol to link "antaŭ" with a verb or a phrase including a verb.
