My girlfriend and I have completed beginner, intermediate and advanced courses. But we have not been speaking Esperanto. We can read and write it well, what should we do to get the necessary immersion to become speakers? We live in a small coastal.city, there is no Esperanto group nearby.....

There is also a voice chat at eo.chatonic.com, but it does not seem very active anymore (currently there’s nobody in it). It was more active once.

But the best way to learn is to get into an immersion environment. If you plan your vacation one year to go to an Esperanto event, I think you'll be astonished at how quickly your speaking improves.

You don't say what country, what city, and what coast you're talking about. But you don't necessarily have to make a big weeks-long trip to attend an Esperanto event. There are a number of weekend events. Even as a normal tourist, you could take advantage of pasporta servo and stay with someone in another city to improve your skills.

It is a pity that support for voice chat at Chatonic petered out. A chat group where you could just eavesdrop on others speaking and chip in either in writing or by speaking seemed a very attractive idea.

I haven't used Skype for some time now. Perhaps now you can have multi-participant discussions voice and text there too.

Setting up a one to one chat if you are a beginner seems somehow too intimidating.
