I read this in the course titled Jen nia IJK:

Ina: Kabe estas interesa nomo...
Kabe: Ĉu? En kiu maniero?

Shouldn't it be Kia instead of Kiu. Because he is asking in what way is his name interesting.

Firstly, if we apply your logic it would need to be 'kiel' rather than 'kia', since the latter means what kind. However, "En kiu maniero" means the same as "kiel", so if you're going to use another correlative you would want to replace the whole expression rather than the single word.

You have a point. Both are possible, however. In this case the difference is small. The answer to en kiu maniero is going to be similar to the answer to en kia maniero.

In other cases, one form would be dominant, because the other would be a strange question.

Mia amiko ankaŭ loĝas en (nomo de urbo).

Ho, jes. En kiu strato? - nomo de la strato

Ho, jes. En kia strato? - Pardonon!!
