At the beginning, extraterrestrials won't say “hello” in any language. It would be an unintelligent (by any means) form of life, that we encounter first on our cosmic journey. (I bet on organism as complicated as vira, bacteria, amœbæ or corals at best.)

First intelligent species we'll meet will be so much more advanced than us, that they would not respond to our attempts of contact. Either it would be a spaceship passing by and not responding to our communication signals sent at them, or a found constructions, abandoned long before our arrival, and we will have no response from them, even though we'll make numerous attempts to send signals or even exploratory missions in the direction of their possible location, concluded by logical reasoning with the data and evidence gathered.

I think the best piece of universal math would be the prime numbers. They are also easy to send. 1+1=2 is a very hard message to encode universaly, aswell as a hydrogensketch. Pythagoras, though easier to illustrate, is not neceserilly that important to another culture, depending on what they use geometry for.

The Voyager Record includes a greeting in Esperanto (Ni strebas vivi en paco kun la popoloj de la tuta mondo, de la tuta kosmo, "We strive to live in peace with the peoples of the whole world, of the whole cosmos" ).

Maybe, they don't have a means of verbal communication. If they wanted to use one of our spoken languages, and they make rational decisions in the same way that humans do, I think they would choose English for a variety of reasons.

Imagine you visit another planet. Wouldn't you choose to say "Hello" in the language of the dominant country?

Chinese language is not suitable for foreigners, so it will be English the China are dealing with the rest of the world.
