No problem doing this, both a baby, your pet or any other person or animal when gender is not known or not relevant.

Ĝi does not line up with English it.

There are some languages with grammatical gender that use the "it" equivalent for babies and animals---and until recently, English was one of them. It is a bit jarring in translation, but that is one of the pitfall of reasoning that way.

Very rarely. It isn't respectful in our culture. Normally, if we don't know the sex, we say "the baby" or "her/his baby".
Really? I hear it used all the time in reference to infants and small children. It seems quite normal to my ear ...
