This site is more extensive than Duolingo, with a lot of content in different places, I wonder how that would be reflected in an app, which tends to be more stripped-down and streamlined.

The new site would have been launched long ago if we were doing nothing but transferring the existing content to a new structure. The learning materials will for the most part not be the same. The new course will be streamlined but it's true that this site will remain far more complex than Duolingo's site. However, it's not out of the realm of possibility that the course alone (or perhaps course plus dictionary) might find itself in app form.
My personal opinion, reflecting no one's view but my own, is that there is no point in having a separate app unless it works offline. Otherwise you could use the ordinary lernu site in your phone's web browser. Particularly the new lernu, which like I said, will scale itself to the window size you're working with.

2- In-app purchases would be a great way to get donations since people's credit cards are already linked to their apple account.
3- It makes Lernu appear more professional. It builds the brand.
4- Some people prefer an app over a scaled website because resources will be local, which means that they can be loaded quickly. This is important for users that don't have a lot of bandwidth.
