A little confused. I'm a beginner and my understanding is that the accusative always agrees. So you say, "Mi havas grandan libron," rather than "Mi havas granda libron."
Is there something I'm missing? Because by that logic "Saluto" and "Amiko" would need to agree to be "Saluton Amikon."

Saluton estas mallonga formo por:
(Mi faras) saluton aŭ (ricevu) saluton!
Tial ĝi estas je la akuzativo.
Amiko ne estas la saluton, sed la homo al kiu oni parolas:
(Ricevu) saluton, (ho) Amiko!
Ĝi ne estas adjektivo. Komparu:
Saluton, esperantistaj amikoj!
Tial estas pli bone meti komon (",") inter la du vortojn.
Saluton, Amiko !
