And I'm thinking;
Ŝi min donis bildo, kaj mi ŝin dankis
Is that grammatically correct, and is it a proper way to say that?
I understand Esperanto can use any order for subject,verb,object, but that SVO is the most common. I like the French (and probably other Romance language) SOV when the object is a pronoun (like in my translation above); is this common in Esperanto?

Also, on another subject, when using the 'x-system', if the first word in a phrase (or a proper noun) starts with an accented letter, is it proper to capitalize the x, or should just the first letter in the digraph be capitalized?

However, this is an example of a sentence with an indirect object and a direct object (accusative). The direct object is what is given, and the indirect object is who (or what) it is given to. In your sentence above,
"bildo" is the direct object, so it would take the accusative ending, whereas "mi" is indirect, so it would take the preposition "al", and not receive the accusative.
Frankouche is correct, the sentence would be:
"Ŝi al mi donis bildon, kaj mi ŝin dankis."

You can do it if you want to (the previous responders to your question correctly noted that word order is flexible and it is grammatically correct to answer that way), but it's so rare. Most people would say "Ŝi donis bildon al mi kaj mi dankis ŝin" or "Ŝi donis al mi bildon kaj mi dankis ŝin"
Esperanto word order is very flexible but in most cases there is a "most common" choice. You will find English is a better model than French for choosing the most common Esperanto word order, with a few notable exceptions.

Also, it's easier to type this way.
