Seems we should change the Lernu dictionary entry to the plural form "makaronioj".
Take a look at the ReVo note for 'nudelo', for example:
Rim.: En la reala uzo ekzistas hezito, ĉu nudelo estas ara (kiel „rizo“ ktp) aŭ indikas unuopan pecon da pastaĵo (nudelpecon).Yes, I suppose you could argue about nudelo or nudeloj, but it probably doesn't matter a whole lot. The same could be said for 'makaronio(j)'. There's no way someone could be misunderstood, regardless of which form they go for, don't you think?

For me it is obvious that one noodle is a nudelo, a whole plateful is nudeloj. I wonder if that is influenced by English; but at any rate I still consider a plateful of macaroni to be "makaronioj"
I suppose it has to do with the size of the piece. Rice as rizo (and not rizoj) makes sense to me, couscous as kuskuso (and not kuskusoj) makes sense (I made up that couscous word, didn't look it up).
What makes sense as singular and plural is surely very cultural and arbitrary to some extent. Israeli couscous (toasted pearls of pasta) is similar in size, shape, and composition to Sardinian fregula pasta and to Lebanese moghrabieh. But the fregula and moghrabieh have names in a singular form, while the Hebrew name for Israeli couscous is plural (ptitim, פתיתים)

However, if we were to talk about different kinds of macaroni, we can still use "makaronioj"; the context would tell us whether we are talking about different varieties, or about a whole plateful of pasta.
