Is there a word already for "carcass"?
I couldn't find one, but I was thinking maybe "bestkadavro" or "bestkorpo".

A korpo could be an alive body, so it's not appropriate here.
The word "kadavro" is the best choice in my opinion. It can refer to a person or an animal. If context wasn't sufficient to indicate that it's an animal, you could certainly add another root, "homkadavro" or "bestkadavro". But I think that context would make it clear in most cases.
