In this case, I would go for the plural ending 'okazantaj', just as I used the plural form 'kiuj' in my alternative sentence. But, if you prefer the singular, then ok.

- ok, so I'm exagerating a little there, but I like the picture of chaos.

If Esperanto had a subjunctive, then this is the sort of context in which it might be used. It seems to me that sometime -u is stretched in that direction.
Which better expresses eventualecon - ie, that may occur?

Essentially such a disclaimer is just defining events for which no responsibility or liability is undertaken. It is not necessary to introduce any reservation as to the likelihood of such events occurring.
I now think that io okazanta dum is more appropriate than io kiu okazas dum, since the adjectival participle has less of an actuality import than the simple tense in a relative clause.
