How would I translate this: I love my neighbor's cat

This is not right. 's is translated by de:
Mi ŝatas la katon de mia najbaro.
ami usually relates a woman or a man, but nevertheless you can say Mi amas la katon.
Mi ŝatas la najbaran katon. means the cat lives in the neighborhood.
Mi amas mian najbaron kaj ties katon. I love my neighbor and his/her cat.
ties is gender indifferent.

You can't use sian in this case. sia relates to the subject, i. e. mi, but sia can't relate to mi, in the case mia is to be used. This is not that you want.
You can use lian or ŝian, but in this case you indicate gender.
Compare:
S-ro X amas sian najbaron kaj ties katon. The cat is of the neighbor.
S-ro X amas sian najbaron kaj sian katon. The cat is of mr X.
PS: if you want save English word order of Alkanadi's sentence, you can say:
Mi amas de mia najbaro propran katon

At least, the result is so strange, that the conclusion is: Don't save the English word order. Get used to the fact that Esperanto puts the owner after the owned thing, with "de" in between, while English puts it before the owned thing, with 's between them.

They can understand it so:
I see my own cat from my neighbor's house.

May be, I was wrong.
Mi vidas de mia najbaro propran katon
They can understand it so:
I see my own cat from my neighbor's house.
Would make more sense to me if one said
Mi vidas de mia najbaro mian propran katon aux lian propan katon

The second personnel adjective really helps narrow down whose "own" cat.

The second personnel adjective really helps narrow down whose "own" cat.
I wanted only expain why the word order cannot be changed. The adding of "mian" or "lian" makes the situation more clear, but doesn't show necesity of the word order "la (propra) kato de mia najbaro". "Propra" cannot help it, as I thought first time.
