My 'new' Wells dictionary list bok choy as 'ĉina brasiko'. Wikipedia suggests 'palmokoro' for heart of palms. Presuming you meant 'Edamame', I'd suggest 'junaj sojfaboj' for ease of comprehension.

I think Edamame is just green beans right? Maybe you could say: verdaj faboj
