Janitor (more specifically sexton). That's what my dad does. He's a sexton for a church. That's his official title, but his job duties are that of a janitor or custodian if he wasn't. He cleans, maintains, does the landscaping, does daily upkeep and maintains the building, parking lot, and lawns.

I rendered that purigisto.

Zip-line course. That's what I'm going to do week after next on my Spring Break. In the army it's called a rope slide---though they don't do a course like they do for recreation. For those who don't know what it is, you are strapped onto a pulley attached to a cable at the top of a hill and you slide down (at a high rate of speed---hopefully) toward the bottom. I'm guessing sxnurglitado???

Whitewater rafting (I'm guessing this would be blankava flosado or maybe rapidakva flosado).

When talking about myself:

I'm a junior marketing major and a psychology minor. I can look up the individual words, but I they dont seem right.

Mi estas merkada cxef(stud)ado kaj psykologia malpligrandado.

And I am a car salesman who works in a car dealership and work on commission.

Mi estas auxtovendisto kiu laboras en auxta merkatejo (vendejo, vendoplaco?) kaj mi laboris por komisiono

I'm going to mostly leave sorting through your specific choices to people with a better grasp of the nuances of Esperanto. (I'm still mostly at the point that I read and listen better than I can produce anyway.) But one of the things I find useful is Jordan's Being Colloquial in Esperanto. The section I've linked in particular deals with building compounds. Coming to see compounds as contractions of prepositional phrases helped me read better, at any rate.

For example, kirkpurigisto might get the essence you want. Also, looking at the definition of sexton, church caretaker (kirkzorgisto) might capture the ways in which a sexton is not exactly a janitor. Lurnu-hivemind, thoughts?

I'm a sexton too, though on a smaller scale. I think a good term for that job would be preĝeja prizorganto. There's more to the description you gave than cleaning. I'm going at it from the direction of caretaker.

Zip line course : possibly ŝnur-glisejo

White water rafting: rapidakva flosado might work.

I think it's fair to describe your dad's occupation as 'bontenisto' (caretaker).
Zip-line course.
'zip-line' is either 'glitkablo' or 'glitŝnuro' depending on whether it's a cable or a rope. 'zip-line course' would be 'glitkablejo' or 'glitŝnurejo'.
Whitewater rafting
'whitewater' (the adjective) is 'sovaĝakva' - 'wild water'. 'whitewater rafting' can be just 'sovaĝakva flosumado' or, to be perfectly clear, you could add '... per kaŭĉuka boato' - 'by rubber boat'.

I would say that you are a "triajarula studento kun merkatumado kiel la ĉefa studfako kaj kun psikologio kiel la neĉefa (a college student with marketing as (his) main subject and psychology as his secondary one).

"mi estas aŭtovendisto kiu laboras en aŭtokoncesiejo ... kontraŭ provizio."

Please note: "provizio" (commission) has nothing to do with "provizo" (supply). "kontraŭ" here means "in exchange for".

Google translates sexton to Russian as "пономарь" - this is "sakristiano" or "psalmisto".
Oxford dictionary defines "man who takes care of church building, digs, graves churchyard etc."
This meaning you can translate by "(preĝeja) domzorgisto/kortzorgisto".

I don't know. I think a new word will have to be invented for that one. Maybe, kabla rajdo or kabla amuzrajdo. Does anyone know what we call Amusement park rides at the fair? I assume that zip line could use a similar construction.

Rapidakva flosado works well for me.
