I certainly have no problem with ludi or muziki but, "What am I doing? I am guitar-ing," strikes me as simple, effective, and quaint.

Would it make sense to say something like

Mi muzikas gitaron aŭ

Mi muzikas per gitaro

If yes, would one be preferable to the other?

..and I don't think it matters at all as long as people understand what one is saying - which is the whole point, after all, and with all those alternatives given above, one can understand the intention, imo.
Being able to say something like 'guitarring' for 'playing the guitar' just makes me applaud the wonderful flexibility of Esperanto once again, and how adaptable it is.
Though still a beginner, I'm a total fan.
