My 'new' Wells dictionary list bok choy as 'ĉina brasiko'. Wikipedia suggests 'palmokoro' for heart of palms. Presuming you meant 'Edamame', I'd suggest 'junaj sojfaboj' for ease of comprehension.

They are certainly green in color, but they are defined as immature soy beans.
