Being a word game, it might well suit Esperantists very well if an Esperanto version existed. It appears quite portable as well.

There definitely isn't a commercial version, though there is nothing stopping anyone from posting online a list of Esperanto word translations, to allow people to print them out onto their own cards.

It would also be cool to see an Esperanto version of other word games like Last Word or Scattergories, but they would be harder to bootleg without the special timer thingys that come with those games.

Of course any boardgame can be played in Esperanto, even if the game is not about language.

Also, should the people on the red cards be changed, as at least one translation of Apples to Apples did, and if so who to?

I would leave off the synonyms altogether, or maybe instead of synonyms, put the translation of the word in the native language of the people playing (if the game is being used as a vocab-building exercise).
As for people on the red cards, I would leave out people that would give an unfair advantage to players with knowledge of U.S. pop culture (I'm thinking of, for example, cards like Andy Warhol or Clark Gable). IMO, the game should be as culturally neutral as possible.
Also, if anyone is seriously considering making and posting a card list, I'd suggest renaming and re-theming the game to avoid copyright issues.
