So as long as it is logically possible, I can form a variety of words from a stem?

1. Yes. But check with the dictionary. If the root is adjectival, then the verb means : to be in that state:

fort|a = strong
mi fortas = I am strong (I would prefer - mi estas forta)

rapid|a
mi rapidas - I rush

In Polish, is there really a plural of "money"? Somehow I've seen *monoj only from Polish speakers, and somehow I think that this word can't logically be plural (after all, what's the difference to the singular?).

In Polish:

money = pieniądze (plural)
a coin = pieniądz (singular)

Polish has many words for money:

pieniądze, forsa, kasa, złociaki, złotówki, złocisze, baksy (US $), dolce (US $), funciaki (pounds), sałata (salad - he he), talarki,... and so on.

coins = monety, bilon

You will probably see also:
pordoj as one door(I sometimes say to someone in english: "could you close the doors?", but I think about only one door)
violonoj as one violin

because it is plural in polish.

Torna all’inizio
