'Vi havas kapon kiu saltigus kloakabindon.'

I don't know if 'kloakabindo' is the usual expression for manhole cover... Anyway, here's my stab:
Via kapo kaŭzus la kovrilon de kloakenirejo salti! (Your head would cause the cover of a sewer-entrance to jump!)

You used the accusative correctly in both places in the sentence. "Kapon" is the direct object of "vi havas" and is therefore in the accusative. Anytime you use a verb with the -ig suffix, it is a transitive verb and must have a direct object. (A verb with the -iĝ suffix is always intransitive and must never have a direct object).
