Meanwhile, I'm wondering how often one needs to use 'parent' singular in English. Not that often, I think. It's probably not hard to get around it in EO.

The old classic note from a teacher to a pupil seems an obvious one. "Please have this note signed by a parent or guardian."

Unu el viaj getpatroj aŭ ŝirmantoj subskribu tiun ĉi mesaĝon, mi petas.

What is another example? Or a better way to translate the above sentence. Do teachers use the same sentence in the USA, the UK? Or is it all done via iPad nowadays?

There is a specific word for guardian in Esperanto, in the sense of individuo jure nomita por zorgi pri persono. It's Kuratoro.
