Sometimes I see an apostrophe at the end of a word. Why is that?

It stands for a missing 'o' (noun marker). This is pretty much confined to songs and poetry. The accent is not changed. Esperantist' would still have the accent on the 'ist'.

It can be also used for a missing 'a' in article 'la', especially in "de l'".
" dank' al" is "danke al"
"Un', du, tri, kvar" in counting to have one sillable for "unu" (1)

According to the Fundamento rules, dank' al can only be interpreted as danko al, which can be seen as a shortcut for a parenthesis "- estu danko al X-".
So it is OK, unless you insist it should be dank(e)' al, which would indeed be irregular.

If you insist in saying "danke", use the accusative: "danke DioN"

Zamenhof was quite liberal with l', but it should be proceeded or followed by a vowel.
e.g., Pro la celoj de l' afero la libro ne estos unu sistema verko—ĝi estos simple mia interparolo kun l' amikoj de l' lingvo internacia.
