English syntax is misleading here - "one ounce gold" should be read as "one ounce OF [quantitative] gold"; "ounce" is not an adjective.
Esperanto's word for "ounce" is derived from the Latinate uncia, hence unco, not *onzo.

Perhaps the poster is looking for a translation of troy ounce - gold weights are expressed in troy ounces, which are different to avoirdupois ounces (troy ounces are heavier).
The answer to the riddle 'Which is heavier, an ounce of gold or an ounce of feathers ?' is the gold.
